Mashed lima beans with beef in tomato sauce

Ingredients
For mashed lima beans
- 250 gr dry lima beans
- 1 sp. coriander, sliced
- 2 sp. lemon juice
- 100 ml olive oil
- salt
- ground black pepper
- grated lemon rind
For the beef
- 2 pounds beef
- 1 large onion, diced
- tomato sauce
- olive oil
- salt
- ground black pepper
Instructions
For mashed lima beans:
– Let the dry lima beans slowly soak in plenty of water from the previous night.
– Boil them for 15 minutes and strain them.
– Peel them and simmer with 1½ liters of water for one hour until they are tender. If we get some broth, keep it.
– In the same pot, using an electric beater, slowly blend with the kept broth until smooth and creamy. Add more water, if necessary.
– Finally, stir grated lemon rind and lemon juice, olive oil, coriander. Season with salt and pepper to taste.
For the beef:
– In a saucepan, sauté the onions with the olive oil, then pour the beef, pepper, some sugar and mix. Add warm water and let it boil. After the meat is tender, pour the tomato sauce and simmer until boil down.
– Serve as we like.
